Emirati budding -Sago

Sago is one of the often dessert, that GCC country tends to do. It is "a starchy foodstuff derived from the soft interior of the trunk of various palms and cycads, used in making puddings" (Sago, n.d.). As the history of the GCC country cuisine especially the United Arab Emirates, this dessert is originated from India and Southeast Asia. The uniqueness of the dish or to make it more Emirati is with the addition of their adorable flavour like saffron and rose water and some nuts to add crispness to the dessert. This dish allowed you to try a new flavour of budding which is specialised by emirates gentlemen and their ladies. This recipe is eaten either hot or cold, and it is still going to be the same flavour and by gourmet choice.

Ingredients

  • Sago bag (400 g) socked in water
  • ½ cup of sugar (feel free to add more or less)
  • 2 cups of hot water
  • ½ cup of rose water
  • 1 cup of oil or 1 stick of ghee or butter
  • crushed cardamoms
  • bunch of saffron

Instruction

  1. To start, wash the sago very well and sock in a water.
  2. Heat your sugar with low heat without moving it until its start to get a golden colour.
  3. Start moving it to be one colour and add the hot water to dissolve the sugar.
  4.  Add the ghee or the oil and saffron and mix it well until is well combined.
  5. Put the cardamom and rose water and cover the pot, and leave it on a low heat for 15-30 minutes. (Don’t forget to move it time to time to prevent it from sticking or burning)

For decorating your dish, you can add nuts on top of the dish of you can mix it with the sago after turning off the heat.
